  • 2 cups pasta, any type
  • 2 tablespoons olive oil
  • 1 clove of minced garlic
  • 1 zucchini, sliced
  • ½ bell pepper, chopped
  • ½ red bell pepper, chopped
  • 1 sliced ​​tomato
  • Season with salt and black pepper
  • ¼ cup chopped parsley

  1. Bring salt water to a boil, add a little oil and stir to prevent the pasta from sticking.
  2. Once the pasta is cooked, drain and set aside.
  3. Add olive oil to a frying pan, add garlic and fry until fragrant. Add the zucchini and stir for 2 minutes, then add the coloured peppers and stir until tender, then add the tomatoes and a pinch of salt and black pepper, stir the vegetables well, cover the pot and let soften for 2 minutes.
  4. Next, add the pasta and mix well until the taste is familiar, add the parsley and turn off the heat and mix well.
