Modus Operandi Of The Kuwaiti Dayi Machboos

 Kuwaiti Majboos Al Dayyi, a distinctive recipe from Kuwaiti cuisine, prepared in an easy way, made of roasted chicken, rice, chickpeas, raisins, spices and rose water. Served with daqoos at dinners.

Modus Operandi Of The Kuwaiti Dayi Machboos


  • To prepare the rice:
  • 2 cups of long grain rice, washed and soaked
  • 2.75 cups boiled chicken broth
  • ¼ cup of rose water with ¼ teaspoon of saffron
  • To prepare the chicken:
  • 1 whole chicken weighing 1500 grams
  • 1 large red onion, sliced
  • 1 teaspoon:
  • coriander seeds - black peppercorns - salt
  • 2 lomi berries - 2 bay leaves
  • 1 cinnamon stick or students
  • To prepare the stuffing:
  • 1 cup of medium-boiled chickpeas, or anchovies, if available
  • ½ cup of raisins
  • 2 tablets:
  • white onion, chopped
  • 2 tablespoons of vegetable oil
  • ½ teaspoon:
  • ground cardamom - ground lime - soft cinnamon - ground black pepper - salt
  • To brown the chicken:
  • 3 tablespoons of vegetable oil
  • ½ teaspoon:
  • white pepper - ground cardamom - salt - rose water
  • ¼ teaspoon saffron threads

How to prepare

  1. Put the chicken in a pot with water over medium heat and add the red onion, salt, pepper, coriander, allspice, lime, bay leaves and cinnamon.
  2.  Close the lid and leave it on the stove for 40 minutes until it is fully cooked. Then put the chicken in a tray and brush it with a mixture of vegetable oil, rose water, white pepper, cardamom and saffron and put it in the oven.
  3.  Bake at 180°C for 30 minutes until golden brown. Meanwhile, add the rice and the cooked chicken stock to a pot and heat over medium-high heat to prepare the rice.
  4.  Close the lid tightly and steam for 10 minutes, reduce the heat and steam for 15 minutes, add the rose water with saffron and steam for 5 minutes.
  5. Prepare the filling, add the onions to the pan and stir with the cooked chicken broth over medium heat, stirring until caramelized. Then add oil and chickpeas and go for 8 minutes.
  6.  Then add the raisins, salt, pepper, ground cardamom, ground lime and soft cinnamon, stir for 6 minutes, then pour the rice into a plate and garnish with the prepared filling, then fry his chicken Serve with Daqoos, Health and Hana.
